This is a lunch I could eat everyday- Sooo yummy! It makes a lot of dressing too so you CAN eat it everyday 🙂

makes eight 2 Tbs. servings


Ingredients:

Greek Salad

  • 1 head romaine lettuce, chopped
  • 1 medium cucumber, peeled and diced
  • 1 medium tomato, cut in wedges
  • 5 olives, sliced
  • Optional: 3 oz. grilled chicken + 2 Tbs. pine nuts
  • 2 Tbs. Greek Dressing

Greek Dressing

  • 1/2 cup extra-virgin olive oil
  • 1/4 cup red wine vinegar
  • 1 Tbs. balsamic vinegar
  • 1/4 cup fresh lemon juice
  • 2 tsp. dried oregano
  • 1 clove garlic, crushed
  • 1 tsp. Dijon mustard
  • 1/2 tsp. Himalayan salt
  • 1 tsp. herbal seasoning blend
  • 2 Tbs. chopped fresh parsley
    Blend until smooth and refrigerate until ready to use.

Directions:

  1. Put all salad ingredients in a bowl and top with dressing
