Okay, I just discovered my new favorite way to eat eggplant! I think I’m late to the party, but eggplant pizza is bomb! I was worried it would be mushy so I hesitated to try it, but it’s really not.
Super simple. Slice eggplant in about half an inch circles, add sauce and toppings of choice (I did mozzarella, fresh basil and tomatoes). Then cook at 450° for about 15-20 min. Ta-da! Yummy veggies! For dinner, I serve these with a big green salad topped with chicken for some protein 😉
