So here’s the thing… I love raw broccoli dipped in ranch dressing. I love raw broccoli dipped in hummus. I don’t really love raw broccoli dipped in nothing though. So what’s a girl to do do when she’s out of hummus and ranch? Get creative, that’s what! Hence this salad… A funky combo of flavors that I happen to think tastes pretty darn good! Super fast to put together when you need a quick, healthy snack
- 1 cup chopped broccoli
- 1 T. mustard
- 1 T. balsamic vinegar
- 1/2 an avocado, chopped
- sliced almonds for garnish
- salt and pepper to taste
- Mix mustard and vinegar in a bowl.
- Pour over broccoli and avocado.
- Season with salt and pepper and top with sliced almonds.
