Artichoke tuna salad over spinach!
Super healthy + super tasty = my kinda food!
- 1 can of solid white tuna in water (wild caught is best)
- 20 olives, roughly chopped
- 1/2 c marinated artichoke hearts, chopped
- 1 red bell pepper, chopped
- 2 t mayo (I use the Veganese brand)
- 1 t lemon juice
- 1/4 t dried oregano
- 1/8 t pepper
- Mix all ingredients until combined
- Serve inside lettuce leaves or over greens
