About:

Artichoke tuna salad over spinach!
Super healthy + super tasty = my kinda food!


Ingredients:

  • 1 can of solid white tuna in water (wild caught is best)
  • 20 olives, roughly chopped
  • 1/2 c marinated artichoke hearts, chopped
  • 1 red bell pepper, chopped
  • 2 t mayo (I use the Veganese brand)
  • 1 t lemon juice
  • 1/4 t dried oregano
  • 1/8 t pepper

Directions:

  1. Mix all ingredients until combined
  2. Serve inside lettuce leaves or over greens
